  • 1/2 cup quinoa uncooked
  • 10 cherry tomatoes chopped
  • 1/2 cucumber chopped
  • 1/2 red onion finely chopped
  • 1 bunch fresh parsley finely chopped
  • 5-6 fresh mint leaves finely chopped
  • 3-4 tbs lemon juice
  • sea salt and cracked pepper


  • Cook the quinoa as per the packet instructions and place into a bowl.
  • Add the chopped fresh ingredients and herbs.
  • Squeeze over the lemon juice and season with salt and pepper.
  • Stir to combine.
