You know how sometimes you just want to make cookies? That feeling happens to me ALL THE TIME!! And while I have my faves (hello choc chip bikkies and jersey caramel cookies), sometimes I feel like making something different. Something a little bit special… but still easy. Really easy!

And that’s where these White Chocolate & Pecan Oat Cookies come in. They’re the perfect way to change up your cookie routine. Yep, a cookie routine is definitely a real thing (at least in my little world it is).

Pecans and white chocolate (or in fact, ANY chocolate!) would have to be one of the best flavour combinations going around. You get the yummy nutty-ness and the sweet, sweet chocolate. OMG it’s good! Throw in a few oats and you have one incredibly good cookie.

These little babies will take you about 10 minutes to prepare… which is nothing! I can’t even unpack and stack the dishwasher in that amount of time (although admittedly, I do tend to procrastinate when it comes to the dishwasher!). And baking cookies is way more fun than unstacking the dishwasher. Clearly!

These cookies store beautifully in an airtight container at room temperature. I’m sure they’d last up to a week, but that has never, EVER had a chance to happen here!

Pecan & White Chocolate Cookies

White Chocolate & Pecan Oat Cookies - Conventional Method

White Chocolate & Pecan Cookies are the perfect partner to your mid-morning cuppa. They also make a delicious midnight snack (but shhh.... that's our little secret!!).

Ingredients

  • 125 g butter
  • 1/2 cup (115g) caster sugar
  • 1/2 cup (120g) brown sugar lightly packed
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup (130g) self raising flour
  • 3/4 cup (70g) rolled oats
  • 1/2 tsp salt
  • 1/2 cup (90g) white chocolate chips
  • 100 g pecans chopped

Instructions

  1. Preheat oven to 180 degrees and line 2 baking trays with baking paper.
  2. Place the butter, caster sugar, brown sugar and vanilla extract into a bowl.
  3. Beat with handheld beaters or a stand mixture until pale and creamy.
  4. Add the egg and beat until well combined.
  5. Sift the self raising flour into the bowl, add the salt and rolled oats, and mix until just combined.
  6. Add the white chocolate chips and chopped pecans and mix together.
  7. Roll into tablespoon sized balls and place onto the baking trays (leaving a gap in between to allow for spreading).
  8. Bake for 10-12 minutes or until lightly golden.

Recipe Notes

I like to chill my cookie dough into the fridge for 30 minutes before rolling into balls.

Ingredients

  • 125 g butter

  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup (130g) self raising flour
  • 1/2 tsp salt
  • 3/4 cup (70g) rolled oats
  • 1/2 cup (90g) white chocolate chips
  • 100 g pecans chopped

Instructions

  1. Preheat oven to 180 degrees and line 2 baking trays with baking paper.
  2. Place the butter, caster sugar, brown sugar and vanilla extract into the TM bowl.
  3. Mix for 80 seconds on Speed 6 (scrape down the sides of the bowl after 40 seconds).
  4. Add the egg and mix for a further 20 seconds on Speed 6.
  5. Scrape down the sides of the bowl, add the self raising flour and salt and mix for 40 seconds on Speed 4.
  6. Add the rolled oats, white chocolate chips and the chopped pecans and mix on Reverse, Speed 3 for 10 seconds.
  7. Roll into tablespoon sized balls and place onto the baking trays (leaving a gap in between to allow for spreading).
  8. Bake for 10-12 minutes or until lightly golden.

  5. Me too… although I never seem to have the ingredients in the fridge to whip them up. I always seem to be out of at least 1 ingredient.
