Bake Play Smile
Cream the butter and sugar until pale. Add the eggs, vanilla extract and Greek yoghurt and beat until combined. Add the lemon juice and beat until combined.
Sift the flour, salt, baking powder and bicarbonate of soda in to the wet ingredients.
Add the poppy seeds and lemon zest to the mix.
Mix the batter until just combined. Don't over mix - it doesn't matter if there are some lumps in the muffin batter.
Using a spoon or an ice cream scoop, divide the batter evenly between the 12 lined muffin tins. Place in the preheated oven and bake until the muffins spring back when touched lightly in the centre.
To make the lemon glaze, mix the icing sugar with the lemon juice until smooth. Drizzle over the top of the cooled muffins.
