Bake Play Smile
Beat the eggs in a medium-sized bowl. Next add the grated parmesan cheese and mix well.
Cook the chopped bacon or pancetta in a frying pan over medium heat until crispy, and then set aside.
When the pasta is cooked, use tongs to remove it form the pot of boiling water and place it straight into the frying pan with the pancetta.
Add ¼ cup of the reserved pasta water. Then shake the pan for about 10 seconds, or until most of the water has evaporated. Finally, remove the pan from the heat and pour in the egg and cheese mixture.
Finally, season with sea salt if needed, a little cracked pepper, loads of parmesan to garnish, and serve immediately.
