Place the beef mince into a bowl and season with salt and pepper. Mix to combine then divide into 10 equal sized balls. Place one of the beef mince balls onto the centre of a mini tortilla.
Drizzle a little oil in a frying pan then place the tortilla beef-side down. Smash the beef down with a plate or something heavy so that the beef mince spreads across the tortilla. Cook on a medium-high heat for a couple of minutes until the beef is brown and cooked through.
Flip the taco over and place a slice of burger cheese on top of the beef. Cover the frying pan with a lid and cook until the cheese has melted.
Slide the taco on to a plate and top with shredded iceberg lettuce, sliced pickles and drizzled with burger sauce.
