What You Need
- dark chocolate – preferably 80% dark chocolate, but you can use whichever type is your favourite (milk or white chocolate are delicious options too!)
- freeze dried raspberries – chopped into pieces. You can buy these from any major supermarket (generally in the dried fruit aisle).
- raw pistachios – chopped into small chunks
How To Make Dark Chocolate Bark with Just 3 Ingredients

Step 1 – Prep The Tray & Melt The Chocolate
Line a baking tray with baking or parchment paper and put it to the side. Melt the chocolate in the microwave.
Step 1 – Assemble The Bark
Pour the chocolate in the tray and spread into an even layer. Sprinkle the raspberries and pistachios on top.
Step 3 – Chill & Cut
Put the tray in the fridge to allow it to set, then cut or break into slices.

Use the highest quality chocolate you can. I really love the 80% dark chocolate, but whatever you prefer is fine.
Can I use milk or white chocolate instead of dark?
Absolutely! You can switch up the chocolate to whatever is your favourite.
Can I use different fruit or nuts?
Yes! You can use any free dried fruit or other nuts like peanuts or cashews.
How do I store my pistachio & raspberry dark chocolate bark?
Keep in an airtight container in the fridge for up to 5 days. You can also store it in the freezer for up to 2 months.

Pistachio & Raspberry Dark Chocolate Bark
Ingredients
- 200 g dark chocolate
- 20 g freeze dried raspberries chopped
- 50 g raw pistachios chopped
Instructions
Conventional Method
- Line a flat baking tray with baking paper and set aside.
- Melt the chocolate in a microwave safe bowl on 50% power in 30 second intervals for 3-4 minutes or until just melted.
- Pour the melted chocolate over the prepared tray and spread out into an even layer.
- Sprinkle over the chopped freeze dried raspberries and pistachios.
- Allow to set before cutting into slices and storing in an airtight container in the fridge for up to 5 days.
Thermomix Method
- Line a flat baking tray with baking paper and set aside.
- Place the chocolate into a clean and dry Thermomix bowl. Grate for 5 seconds, Speed 9. Melt for 3 minutes, 50 degrees, Speed 2 (or until melted).
- Pour the melted chocolate over the prepared tray and spread out into an even layer.
- Sprinkle over the chopped freeze dried raspberries and pistachios.
- Allow to set before cutting into slices and storing in an airtight container in the fridge for up to 5 days.

Hi. I have searched everywhere for freeze dried raspberries. Neither Coles, Woolies nor Aldi sell them. The only kind I could find was at a health food store and as they were organic they were brown and unappetizing-looking. Nothing like your photographs. Help??

Hi Jane, if they're not at your local Woolies or Coles, I'd suggest trying online (there's quite a few options available in Aus). That no good that your health food store ones were brown! I haven't come across that before!!!
