One Bowl Peach and Yoghurt Cake

You know how sometimes you just need a really good slice of cake? I know that feeling well. It happens a lot around here. There’s nothing a piece of Peach & Yoghurt cake can’t fix. Nothing at all!

This Peach & Yoghurt Cake is seriously one of the easiest things you’ll ever make. You literally pop everything into a bowl. Beat it together and then add the slices peaches over the top. That. Is. It. Cake that’s yummy and easy? Sign me up now!!

I used a big can of tinned peaches in my cake, but you could definitely use fresh peaches instead. Or you could get all creative and use any kind of tinned fruit you like. I think apricots would be delicious too.

The moisture from the peaches and the yoghurt makes this cake absolutely delicious. In fact, I know it’s a big call, but I think you could say that it’s the PERFECT partner to your afternoon cuppa. Or in my case, a morning cuppa with some friends.

Peach & Yoghurt Cake

One Bowl Peach and Yoghurt Cake - Conventional Method

A quick and simple Peach and Yoghurt Cake.

Ingredients

  • 165 g caster sugar
  • 1 lemon zest grated
  • 2 tbsp lemon juice
  • 2 eggs
  • 180 g vanilla yoghurt
  • 130 g vegetable oil
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 1/2 tsp baking powder
  • 1 tsp bi-carb soda
  • 1 X 820g tin sliced peaches drained

Instructions

  • Preheat oven to 170 degrees.
  • Grease and line a 20cm cake tin with baking paper.
  • Place the caster sugar, lemon zest, lemon juice, eggs, yoghurt, vegetable oil and vanilla extract into a bowl.
  • Beat together with a stand mixer on medium speed for 30 seconds or until well combined.
  • Sift over the plain flour, baking powder and bi-carb soda.
  • Beat for a further 1-2 minutes on medium speed.
  • Pour the cake batter into the prepared tin.
  • Arrange the peach slices on top.
  • Bake in the oven for approximately 45 minutes or until a skewer inserted into the middle comes out clean.
  • If your cake needs extra cooking time, but the top is already golden, simply add a sheet of foil over the top and continue to bake in the oven.

  • Mix together on Speed 5 for 20 seconds.
  • Scrape down the sides of the bowl and mix for a further 10 seconds.

  • Bake in the oven for approximately 45 minutes or until a skewer inserted into the middle comes out clean.
  • If your cake needs extra cooking time, but the top is already golden, simply add a sheet of foil over the top and continue to bake in the oven.
