A couple of years ago I posted a recipe for Carmelitas. Don’t worry. I don’t expect that you saw it. In fact, it was so early on in my little blog’s life that there’s a fair chance only my hubby and Mum would have seen it! But it really is just the best recipe and so it seemed a shame not to recreate it and share it again!

There’s also two more reasons that I wanted to write ‘new & improved Carmelitas’ recipe. The first one is that the old photos are seriously horrendous. Shudder worthy, I tell you! And the second reason is because I always get emails off people saying they they love the old recipe but would like to make it in their Thermomix. And so, here are my ‘new & improved Carmelitas’… with slightly less horrific photos AND Thermie instructions. Whoop whoop!

New & Improved CarmelitasOk now let me start off by saying that this slice is definitely one for all of the sweet tooth’s out there. If you’re more of a savoury chick (or guy), steer clear. This slice is packed full of oats, caramel and chocolate. ALL. THE. BEST. THINGS!!

New & Improved Carmelitas

It’s the simplest slice ever to make… BUT you absolutely must leave it for a few hours before trying to cut it into slices. Seriously, if you can possibly leave it overnight… do that! It will make your slices sooooooo much easier to cut. Why, you might ask? Well the caramel sauce will go firm in the fridge… but if you don’t allow it to set, you’ll have an ooey gooey (and totally delicious) mess happening.

New & Improved Carmelitas

These new & improved Carmelitas are made with the most mouth-watering combination of oats, caramel and chocolate. Totally and utterly irresistible!

Ingredients

  • 175 g butter
  • 3/4 cup brown sugar packed firmly
  • 1 tbs vanilla extract
  • 1 cup plain flour
  • 1 cup rolled oats
  • 1 tsp bi-carb soda
  • pinch salt
  • 35 chewy caramel squares like Werthers Originals
  • ½ cup full fat cream
  • ½ tsp salt optional
  • 1 cup chocolate baking chips

Instructions

Conventional Method

  • Preheat oven to 180 degrees celsius (fan-forced). Line a 20 X 20cm cake tin with baking paper or foil, leaving an overhang on two sides.
  • Melt the butter in the microwave. Add the brown sugar and vanilla and whisk together until the sugar has dissolved.
  • Add the plain flour, oats, bi-carb and salt. Stir until combined.
  • Add half of the mixture to the tin and press down firmly.
  • Bake in the oven for 10 minutes.
  • Meanwhile combine the caramels, cream and salt in a saucepan (or in the microwave) over low heat. Stir until melted and well combined (about 5 minutes).
  • Spread the chocolate chips over the cooked oat base.
  • Pour the salted caramel sauce over the top of the chocolate chips.
  • Crumble the remaining oat mixture over the top.
  • Cook for approximately 15 minutes in the oven.
  • The slice will be ready when the oats have turned golden and the caramel sauce in the middle is bubbling.
  • Allow the slice to cool in the tin and then place in the fridge overnight.
  • Take the slice out of the fridge and cut into squares.

Thermomix Method

  • Preheat oven to 180 degrees celsius (fan-forced). Line a 20 X 20cm cake tin with baking paper or foil, leaving an overhang on two sides.
  • Place the butter into the TM bowl and melt on 80 degrees, 2 minutes, Speed 2. Add the brown sugar and vanilla and mix on Speed 3, 10 seconds. Scrape down the sides of the bowl and repeat.
  • Add the plain flour, oats, bi-carb and salt to the bowl.Mix on Reverse, Speed 3, 10 seconds. Scrape down the sides of the bowl and repeat for a further 10 seconds.
  • Add half of the mixture to the tin and press down firmly. Bake in the oven for 10 minutes.
  • Meanwhile place the caramels, cream and salt into the TM bowl. Melt on 80 degrees, Speed 3, 4 minutes (scrape the sides after 2 minutes).
  • Spread the chocolate chips over the cooked oat base. Pour the salted caramel sauce over the top of the chocolate chips. Crumble the remaining oat mixture over the top.
  • Cook for approximately 15 minutes in the oven. The slice will be ready when the oats have turned golden and the caramel sauce in the middle is bubbling.
  • Allow the slice to cool in the tin and then place in the fridge overnight. Take the slice out of the fridge and cut into squares.

    I’ve never heard of Carmelitas until this week, and I’ve seen about 4 different posts on the,. I think its a sign that I need to make them! Yours look so incredible

    I made these with a berry sauce on the base, then little Easter eggs over the berry sauce, then caramel sauce over the Easter eggs, then the topping. Everyone loved them!!

    Can someone (possible from Australia) tell me what are the equivalent of Werthers Original Caramels? I tried with a type of fudge, but it wouldn’t melt. I can only find chocolate covered caramels in the supermarket 🙁

      Sorry Lucy – I thought you were in the US! I have today FOUND Werthers Original Chewy Toffee’s!!! I had only ever seen the hard Butterscotch type ones – never the Chewy ones!

    Can’t contain my excitement as I am making this slice. I took the base out of the oven and it had a perfect border around the outside to scatter my choc chips and pour the caramel into. Then as I was dripping bits of amazing topping onto it, it just looked soooo good. Luckily I am taking it to a function tomorrow otherwise I would be eating way too much of it myself. Recipe is awesome. x
