I have a bit of a soft spot for ANZAC cookies and it’s not because they are so delicious… which of course we all know they are. Nope, it’s because the very first blog post I wrote on Bake Play Smile was for ANZAC cookies (you can check it out here)! And that means that it’s been a whole year since Bake Play Smile started! Wow. I first started this blog as a way for me to keep track of all of my favourite recipes, as well as a little spot for me to write about some of the things I was doing in my classroom. I needed a bit of a change and challenge in my life and thought a blog would give me exactly that! Never, ever in my wildest dreams did I think that a year later it would have become so much more than that.

Through my blog I’ve met so many like-minded people who just love to get their bake on. Thank you for inspiring me to pursue my baking obsession and helping me to evolve Bake Play Smile from ‘a little bit of everything blog’ into a whole-hearted chocolate, caramel, sprinkle-filled baking blog!

Macadamia, Cranberry & White Chocolate ANZAC Cookies

Ingredients

  • 115 g unsalted butter softened
  • 3/4 cup dark brown sugar 150g
  • 1/4 cup caster sugar or raw sugar
  • 1 large egg at room temperature
  • 2 teaspoons vanilla essence
  • 1 and 2/3 cups rolled oats 140g
  • 1 cup plain flour 125g
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup white chocolate chips
  • 3/4 cup chopped macadamia nuts
  • 1/2 cup dried cranberries

Instructions

  • Cream the softened butter and both sugars together on medium speed with a beater or stand mixer until smooth.
  • Add the egg and mix on high for 1 minute.
  • Scrape down the sides and bottom of the bowl.
  • Add the vanilla essence and mix on high until well combined.
  • Set aside.
  • In a separate bowl, mix the oats, flour, cinnamon, baking powder, and salt together.
  • Add the dry mix to the wet ingredients and mix on low until well combined.
  • Fold in the white chocolate chips, cranberries and macadamia nuts.
  • Place the dough into the fridge for at least 30 minutes.
  • Preheat oven to 180 degrees celsius.
  • Line two large cookie trays with baking paper.
  • Roll balls of dough (about 1.5 tablespoons of dough per cookie) and place 2 inches apart on the baking sheets.
  • Press in a few extra white chocolate chips, cranberries and macadamia nuts into the top of the cookies so that they look pretty!
  • Bake for 10-11 minutes until very lightly browned on the sides.
  • Don't worry if the centres look soft - they will harden on cooling.
  • Remove from the oven and leave to cool on the baking trays for 5 minutes before transferring to a wire rack to cool completely.
  • These cookies can be stored in an airtight container at room temperature for up to 1 week.

 

Macadamia, Cranberry & White Chocolate ANZAC Cookies – Thermomix Instructions

Cream the softened butter and both sugars together on Speed 4 until smooth (you will need to scrape down the sides of the bowl).

Add the egg and mix on Speed 4 for 20 seconds.

Scrape down the sides and bottom of the bowl.

Add the vanilla essence and mix on Speed 2 until well combined.

Add the oats, flour, cinnamon, baking powder, and salt to the bowl.

Mix on Reverse Speed 4 for 1 minute or until well combined.

Add the white chocolate chips, cranberries and macadamia nuts and mix on Reverse Speed 2 until mixed through.

Place the dough into the fridge for at least 30 minutes.

Preheat oven to 180 degrees celsius.

Line two large cookie trays with baking paper.

Roll balls of dough (about 1.5 tablespoons of dough per cookie) and place 2 inches apart on the baking sheets.
Press in a few extra white chocolate chips, cranberries and macadamia nuts into the top of the cookies so that they look pretty!
