Long Weekend Bliss

How good is it living in Melbourne and having today off for the Melbourne Cup! And even better if you had yesterday off too (yippee I did….sorry I don’t mean to gloat… but yippeeeee!). To be honest I’m not really a fan of horse racing, but I do love horses on Melbourne Cup Day, purely because if it wasn’t for them we wouldn’t be having a public holiday! So just for today, horse racing is A-OK by me. Mind you I have absolutely no idea how to put a bet on!


Anyway, it’s been such a lovely long weekend. We had my brother-in-law, sister-in-law and my gorgeous nephews stay with us a few nights. I loved eating Magnum Ego ice-creams while watching Teenage Mutant Ninja Turtles and playing Uno with the boys! We also had a yummy lunch on Sunday with some of my husbands relatives. And yesterday I visited one of my best friends and her brand new baby boy. He is just too ridiculously cute! He slept the whole time I was there, but that didn’t stop me from having lots and lots of cuddles with him.

IMG_3078Β Other than that I am loving the glimpses of warm weather we are starting to have (until it is washed away by the hail and rain!). And I am totally loving all of the beautiful flowers that are popping up everywhere. Everywhere except my own garden of course… we all know that gardening is not my forte. Luckily I know some lovely people (mum/aunty/friends!) who ARE wonderful gardeners and they have very kindly given me some of their flowers. So, the moral of the story is that if you can’t garden, then make sure you are related to, or friends with, people who can!




And the long weekend has also meant time for baking…. this orange and almond cake was inspired by Katie180 and I kind of mix matched her recipe and mine together to make this delicious and healthy version. Here’s the link to my original recipe… and Katie’s one. I followed her rule and didn’t use any sugar in the cake. I did however, make my usual syrup but I cut back on the sugar by half. The oranges were beautiful and ripe so they gave it just enough sweetness. Mmmm how good is cake?!



I’ve also whipped up a few of my favourite dinner recipes, including this roast vegetable tart which is so quick, easy and totally moorish (especially if you are a fan of pastry!). And I’ve got a big batch of my favourite vegetable and bacon soup on the stove at the moment and it is smelling deeeelish! Oh and tonight my plan is to make mini Apple Crumble Pies! The recipes for the soup and pies will be rocking up on the blog in the next week or two, depending on how organised I am. πŸ™ Note: Sad face equals that I probably won’t be organised so it’s best to expect them next week… just to be safe.

PS – Is it just me who thinks every weekend should be a long weekend? You really do get to do a whole lot more livin’ over 4 days rather than just 2!!!

  1. I love fresh flowers although it’s been so hot and dry up here my roses have stopped flowering and I’ve had to resort to buying flowers from the shop to fill the gap! I love productive weekends, but haven’t had one in a while! Have fun today.

I’m definitely jealous of the Victorians today – not that we did much work in our office with racing festivities πŸ™‚ Enjoy the rest of your week!

  9. I have to say that my hubby has had two days off, RDO’s and the like and so it’s been great having help around the house, it’s meant my work has been done with less stress, the kids have seen more of his and I haven’t had to hardly change a nappy!! Here’s to your great baking success πŸ™‚

Where do you buy your almond meal from (supermarkets?) I find its so expensive. I was hoping to try the markets this week! I will stock up and try your cake, got an almond obsession at the moment
