One of my favourite desserts growing up were self-saucing puddings… chocolate, lemon, butterscotch… they were all winners with me! And honestly, nothing at all has changed. I still LOVE self-saucing puddings to bits. Absolute bits.

Which brings me to this Fudgy & Rich Chocolate Self-Saucing Pudding. OMG I am not joking when I say it’s fudgy and rich. If anything, that’s the understatement of the year. This is sooooo good. And if you’re a chocoholic like me, you’re going to be like a pig in mud. Rolling in happiness I tell you.

Like pretty much every other recipe on this wee little blog, this is one crazy-easy dessert. You could pretty much make it with your eyes closed (although don’t go blaming me for any mishaps if you do choose to go the eyes closed route!!!). You simply mix up the pudding base, sprinkle over some extra cocoa and sugar and carefully pour over boiling water.

Then just like magic, this rich chocolate self-saucing pudding will come out of the oven with a delicious cake-like top over the BEST fudgiest chocolate sauce. Get in my bellllllyyyyyyyy!!!!

Now you could totally eat this on it’s own, BUT there is absolutely no fun in that. So go crazy, add a huge scoop of vanilla ice-cream (or even some custard would be yum!) and sit and enjoy the pure and utter yumminess of the perfect winter comfort dessert.

Ingredients

  • 60 g butter
  • 125 g (1/2 cup) milk
  • 2 tsp vanilla extract
  • 1 egg lightly beaten
  • 150 g (1 cup) self-raising flour
  • 25 g (1/4 cup) cocoa powder
  • 110 g (1/2 cup) caster sugar
  • 450 ml boiling water
  • 1/4 cup extra 25g cocoa powder
  • 1/2 cup extra 110g caster sugar
  • icing sugar to dust

Instructions

  • Preheat oven to 160 degrees celcius.
  • Grease a large oven baking dish and set aside (minimum of 6 cup capacity).
  • Melt the butter in the microwave and allow to cool slightly.
  • Add the milk, vanilla extract and egg and which together.
  • Sift the self-raising flour and cocoa powder into a bowl. Add the caster sugar and mix together.
  • Pour the liquid over the flour mixture and stir to combine.
  • Pour the mixture into the prepared dish.
  • Boil the water and set aside.
  • Sift the extra cocoa powder over the pudding mixture.
  • Sprinkle over the extra caster sugar.
  • Carefully pour over the boiling water.
  • Bake for 30 minutes or until firm on the top.
  • Allow to cool slightly, then dust with icing sugar.
  • Serve with vanilla ice-cream or custard.

  • Set aside in a separate bowl.
  • Place butter into a clean TM bowl and melt on 100 degrees, Speed 1, 2 minutes.
  • Allow to cool slightly.
  • Add the milk, vanilla extract and egg and mix on Speed 4, 20 seconds.
  • Add the sifted self-raisingflour/cocoa and caster sugar and mix on Speed 4, 5 seconds.
  • Scrape down the sides of the bowl and mix for a further 10 seconds or until smooth.
  • Pour the mixture into the prepared dish.
  • Boil the water and set aside.
  • Sift the extra cocoa powder over the pudding mixture.
  • Sprinkle over the extra caster sugar.
  • Carefully pour over the boiling water.
  • Bake for 30 minutes or until firm on the top.
  • Allow to cool slightly, then dust with icing sugar.
  • Serve with vanilla ice-cream or custard.

I love self saucing puddings, apart from the yumminess factor, it’s like cooking magic! I make mine in the slow cooker because I am THAT lazy!
