Easy Turkish Delight Rocky Road (with M&M's!!)

You might have guessed that a fair bit of baking goes on in our house (yep, that’s quite the understatement!). But I would have to say that one of the most popular things that gets made over and over again is rocky road. It’s quick, easy and so simple. Plus it’s full of chocolate… which means it gets 2 thumbs up from me.

I’m pretty sure I’ve nearly made every single variation of rocky road under the sun. But this Turkish Delight Rocky Road is by far one of my favourites. It’s pretty much my classic rocky road recipe, but with chunks of Turkish Delight bars instead of lolly raspberries. If you’re a fan of Turkish Delight, then this has your name all over it!!

Oh and did I mention that this rocky road also has mini M&Ms AND sprinkles in it. Because extra chocolate and cutesy sprinkles make everything so much better. SO much!!

Easy Turkish Delight Rocky Road (with M&Ms!!)

I like to make my rocky road in the microwave – purely because it’s just so easy. You can use a double-boiler on the stove to melt your chocolate (or of course your Thermomix if you have one). I love that this takes less than 10 minutes to make. In fact, it’s probably more like 5 minutes… but you have to allow some time for nibbling on the marshmallows as you go, right? Right!!??

One little tip is to add some coconut oil to your chocolate before you melt it. This really helps with cutting your Turkish Delight rocky road later on. It also thins out the chocolate, making it easier to stir through the yummy add-ins. If you don’t have any coconut oil, that’s ok… it’s not essential (but highly recommended!).

Ingredients

  • 400 g milk chocolate melts dark or white chocolate can also be used
  • 30 g coconut oil
  • 115 g (1 cup) salted peanuts
  • 50 g mini marshmallows
  • 2 55g Turkish Delight bars chopped roughly
  • 50 g tube mini M&Ms
  • 1/4 cup sprinkles to decorate

Instructions

  • Grease and line a 20X20cm square baking tray with baking paper and set aside.
  • Melt the chocolate and coconut oil in a microwave safe bowl in 30 second intervals on 50% power, stirring each time until just melted.
  • Add the salted peanuts, mini marshmallows, Turkish Delight bars and mini M&Ms and stir until completely covered.
  • Spoon into prepared tray and decorate with sprinkles (100s and 1000s).
  • Place into the fridge for 2-3 hours or until completely set.
  • Cut into slices.

Ingredients

  • 400 g milk chocolate melts dark or white chocolate can also be used
  • 30 g coconut oil
  • 115 g (1 cup) salted peanuts
  • 50 g mini marshmallows
  • 2 55g Turkish Delight bars chopped roughly
  • 50 g tube mini M&Ms
  • 1/4 cup sprinkles to decorate

Instructions

  • Grease and line a 20X20cm square baking tray with baking paper and set aside.
  • Grate the chocolate on Speed 8 for 10 seconds.
  • Add the coconut oil and melt on 50 degrees, Speed 3 for 4 minutes (scraping down the sides occasionally).
  • Chop the Turkish Delight bars into large chunks using a knife.
  • Add the peanuts, marshmallows, Turkish Delight chunks and mini M&Ms to the bowl.
  • Mix on Reverse Speed 1 for 20 seconds (using the spatula to help mix the ingredients together).
  • Spoon into prepared tray and decorate with sprinkles (100s and 1000s).
  • Place into the fridge for 2-3 hours or until completely set.
  • Cut into slices.

This looks the business! I love anything Turkish Delight but especially Rocky Road because there is chocolate AND candy in every bite! As you say it’s so easy to make, the only difficult part is waiting for it to set!
