A few weeks ago it was my baby shower and these easy blinis made an appearance! I love bite-sized party food because you get to have a little bit of everything, rather than just one or two things (because where on earth is the fun in that!?!).

And with the party season in full swing right now, there seemed like no better time to share this recipe with you! Whether you’re taking a plate to a Christmas get-together, heading to a New Years Eve party or just having friends around for nibbles and drinks – this is the recipe you need!

I topped my blinis with caramelised onion, prosciutto, goats cheese and fresh herbs, but you could mix and match with any toppings you like (smoked salmon and cream cheese is a winner too!).

The blinis can be prepared and cooked the day before and left in an airtight container in the fridge. Then it’s simply a matter of grabbing them out when you need them, popping on the yummy toppings and you’re good to go! In fact, I made these for my baby shower, because I wanted food that I didn’t have to worry about fussing around with on the day. Let’s face it, when you’re at a party, the last thing you want to be doing is spending hours in the kitchen!

I know I said the blinis are easy… and I’m not joking! They’re so simple! They’re made from a really simple batter that includes sour cream and cheese, which gives them the best flavour. You can make your blinis as big or as small as you like – I personally prefer teeny-tiny ones (but again, that’s just because I like to be able to eat at least one of EVERYTHING!!).

Easy Blinis With Goats Cheese & Prosciutto

These easy blinis with a goats cheese, prosciutto and caramelised onion topping take no time at all to whip up... and they're the most delicious bite-sized party food!

Ingredients

  • 140 g self raising flour
  • 1/4 tsp bicarbonate of soda
  • 1/4 cup of milk
  • 1 egg
  • 180 g sour cream
  • 20 g butter melted
  • 40 g (1/2 cup) grated cheese cheddar or parmesan
  • Salt and pepper to season
  • 100 g goats cheese or feta
  • 100 g thinly sliced prosciutto
  • 200 g caramelised onions store-bought in a jar

Instructions

  1. Sift the flour and bicarbonate of soda into a bowl.
  2. Make a well in the centre.
  3. Mix the milk, egg, sour cream and melted butter together in a jug.
  4. Pour into the well in the centre of the flour mixture.
  5. Whisk until you have a smooth batter.
  6. Add the grated cheese and salt and pepper and mix to combine.
  7. Cover with cling wrap and place into the fridge for 30 minutes.
  8. Cook teaspoon-sized dollops of mixture over a medium-heat frying pan (with a drizzle of olive oil) until bubbles begin to appear on the top (approx 1-2 minutes). Flip over and cook for a further 1-2 minutes on the other side.
  9. Continue cooking in batches until all of the blinis have been made.
  10. Add a dollop of caramelised onions, a slice of prosciutto, crumbled goats cheese and garnish with fresh herbs.

Ingredients

  • 40 g cheese cheddar/parmesan
  • 20 g butter
  • 140 g self raising flour
  • 1/4 tsp bicarbonate of soda
  • 180 g sour cream
  • 1/4 cup of milk
  • 1 egg
  • Salt and pepper to season
  • 100 g goats cheese
  • 100 g thinly sliced prosciutto
  • 200 g caramelised onions

Instructions

  1. Place cheese into the TM bowl and grate by pressing Turbo 8-10 times.
  2. Set aside.
  3. Place the butter into the TM bowl and melt on 80 degrees, 1 minute, Speed 3.
  4. Add all of the remaining ingredients (except for the prosciutto and goats cheese).
  5. Mix on Speed 5, 30 seconds.
  6. Cover with cling wrap and place into the fridge for 30 minutes.
  7. Cook teaspoon-sized dollops of mixture over a medium-heat frying pan (with a drizzle of olive oil) until bubbles begin to appear on the top (approx 1-2 minutes). Flip over and cook for a further 1-2 minutes on the other side.
