Chewy Peanut & Chocolate Brownie Cookies

Cookies and brownies would have to be two of my favourite things in the world… so put them together and I am quite literally like a happy little pig in mud! And that’s exactly what these deliciously chewy peanut and chocolate brownie cookies are – seriously, you get the best of both worlds in one yummy bite!

Brownies are so darn good because they have a crispy flaky top and then the most deliciously rich and chewy centre. So say hello to brownie cookies! Yep, they have exactly the same features of a brownie… but in a bikkie! How cool is that!

I’m sure by now you know that I’m a big fan of neat and tidy baking. And by that I mean that I love perfectly cut slices and cookies that have chocolate chips placed in exactly the right spot. So I have to say that whenever I make these brownie cookies it puts me way out of my comfort zone. No matter what you do, you’ll get that crinkly (almost ‘earthquake’) look. But hey, that’s the charm of them… and what makes them so brownie-like!

I’ve made these cookies quite a few times now (sometimes they’re known as ‘brookies’) and they’re just so consistently yummy. In this version I added peanuts… because we all know that peanuts and chocolate go together like sunshine and lollypops. But other times I’ve added extra chocolate chips or even M&Ms. You can of course, go plain and simple and leave out any add-ins… but come on people. Add-ins are fun!

Oooh and the best thing is that if you store them in an airtight container they stay deliciously chewy for days – but if they last more than one day in your house, you’re doing better than me (ours always disappear embarrassingly quickly!).

Chewy Peanut & Chocolate Brownie Cookies - Conventional Method

Ingredients

  • 115 g butter chopped
  • 300 g dark chocolate melts
  • 3 eggs
  • 1 cup (240g) caster sugar
  • 2 tbs . cocoa powder
  • 2 tsp . vanilla extract
  • ½ tsp . salt
  • ½ tsp . baking powder
  • ¾ cup plain flour
  • 3/4 cup unsalted peanuts

Instructions

  • Preheat oven to 180 degrees celsius.
  • Line 2 flat cookie baking trays with baking paper and set aside.
  • Place the chopped butter and chocolate melts into a microwave safe bowl.
  • Place into the microwave and heat for 3 minutes (or until just melted) on 50% power, stirring every 30 seconds with a metal spoon.
  • Place the eggs, caster sugar, cocoa powder and vanilla extract into a large bowl.
  • Beat with handheld beaters or a stand mixer for 3 minutes.
  • Slowly add the melted chocolate mixture to the egg mixture beating in between additions.
  • Add the salt, baking powder and sifted plain flour.
  • Mix until just combined.
  • Add the peanuts and fold through with a spatula.
  • At this stage the mixture will be very thin (almost like a cake batter).
  • Place tablespoonfuls of the mixture onto the prepared trays.
  • The cookies will spread so make sure you leave a 3-4cm gap between each cookie.
  • Bake for 12 minutes.
  • Remove from the oven and leave on the baking trays for a further 10 minutes (they will continue to cook).
  • Use a flat spatula to transfer the cookies to a wire rack to cool completely.

  • Melt on Speed 2, 80 degrees for 3 minutes (or until melted) - you may need to scrape down the bowl partway through.
  • Remove melted chocolate/butter and set aside.
  • Place the eggs, caster sugar, cocoa powder and vanilla extract into the TM bowl (no need to clean it).
  • Insert the butterfly and mix on Speed 4 for 2 minutes.
  • Reduce to Speed 1 and slowly add the melted chocolate mixture to the egg mixture through the MC hole.
  • Increase to Speed 3 for 20 seconds.
  • Redue to Speed 1 and add the salt, baking powder and plain flour through the MC hole.
  • Mix until just combined.
  • Add the peanuts and fold through with a spatula.
  • At this stage the mixture will be very thin (almost like a cake batter).
  • Place tablespoonfuls of the mixture onto the prepared trays.
  • The cookies will spread so make sure you leave a 3-4cm gap between each cookie.
  • Bake for 12 minutes.
  • Remove from the oven and leave on the baking trays for a further 10 minutes (they will continue to cook).
