While I may just happen to be one of the biggest self-confessed chocoholics in the world, I am also a massive, MASSIVE caramel fan. In fact, sometimes I’d choose caramel over chocolate. I know…. that’s how strong my love of ooey-gooey caramel is!

But why choose just one of your favourite loves when you combine the two… and make totally delicious, super sweet Caramel Filled Chocolate Biscuits? See, there’s no reason to choose between chocolate and caramel – especially not when these yummy cookies are hanging around!

To make these biscuits you simply add all of the ingredients into a food processor or Thermomix and mix together. Umm, talk about easy. Golly gosh I love that. And then wait for it… the best part of all…

The CARAMEL!!! Yep, there is absolutely no mucking around when it comes to making the caramel filling. All you need is a tin of Nestle Top ‘N’ Fill Caramel (or any pre-made thick caramel), give it a good whisk until it’s nice and smooth and then pop a spoonful into the middle of two biscuits. Seriously, could this recipe be any easier?

Mind you, while this recipe is super easy, there is one thing that is incredibly difficult. And that my friends, is refraining from eating all of the leftover caramel. Trust me, that’s super hard (actually if you’re me, it’s impossible). See that little pot of caramel in the photos? By the time I finished taking the photos there was not much left at all. Oops (but totally worth it!).

Ingredients

  • 65 g cold butter
  • 35 g (1/4 cup) icing sugar
  • 65 g (1/2 cup) plain flour
  • 2 1/2 tsp cornflour
  • 1 tbs cocoa powder
  • 1 egg yolk
  • 1 X 380g tin Nestle Caramel Top 'N' Fill - please note that you wont need the whole tin for this recipe or any pre-made thick caramel

Instructions

  • Preheat oven to 180 degrees celsius.
  • Line 3 baking trays with baking paper and set aside.
  • Place the butter, icing sugar, plain flour, cornflour, cocoa powder and egg yolk into a food processor and mix until you have a smooth, soft dough (alternatively you could mix well with a spoon until a dough forms).
  • Wrap the dough in plastic wrap and place into the fridge for 30 minutes.
  • Roll heaped-teaspoonfuls of mixture into balls and place onto the prepared trays.
  • Press the balls down slightly.
  • Bake for 5-7 minutes or until just lightly cooked (they'll continue to cook on the trays when they've been removed from the oven).
  • Allow to cool on the trays for 10 minutes before transferring to a wire rack to cool completely.
  • Use a fork to whisk the caramel until smooth and creamy. Place into the fridge to thicken again (approximately 30 minutes).
  • Spoon a small amount of caramel on top of one of the chocolate biscuits and sandwich with another biscuit.

  • Wrap the dough in plastic wrap and place into the fridge for 30 minutes.
  • Roll heaped-teaspoonfuls of mixture into balls and place onto the prepared trays.
  • Press the balls down slightly.
  • Bake for 5-7 minutes or until just lightly cooked (they'll continue to cook on the trays when they've been removed from the oven).
