Ok so you know how a while ago I posted the recipe for my hubby Dave’s Slow Cooker Pulled Pork Burgers? Need a reminder? Click here for all that deliciousness! Anyway, this is the recipe that I was talking about in that post! Yep, this Asian Slaw with Satay Dressing is the bomb-diggity-bomb.

Dave usually makes this to go with his burgers and OMG, OMG, OMG… seriously it’s so good. I usually get him to make a double batch so I can keep eating it for lunch for days and days!

The satay dressing is definitely what makes this slaw so darn good. The combination of the crunchy peanut butter with the crispy vegetables is pretty much a match made in happy-tummy-heaven. And yes, that is totally a place.

This Asian Slaw with Satay Dressing is also a massive hit at BBQs. It makes a BIG bowl so there’s plenty to go around. And add some grilled chicken skewers to the top and you’ll be like a pig in mud. Oooh yeah!

According to Dave (the slaw expert), you should toss the satay dressing through the slaw just before serving so that everything stays nice and crunchy. But to be honest, I’m a huge fan of eating the leftovers of this slaw when all of the flavours have well and truly ‘smooshed’ together… mmmm drool!

Anyway, this really is a fab salad recipe. It’s sure to be a hit AND it makes an awesome change from your usual coleslaw. I pinky promise!

Asian Slaw with Satay Dressing - Conventional Method

Ingredients

  • 1/4 purple cabbage finely chopped
  • 1/4 green cabbage finely chopped
  • 1 red capsicum sliced
  • 2 carrots peeled and thinly sliced
  • 1/2 cup chopped spring onions
  • Sauce:
  • 1 clove garlic minced
  • 1 X 2cm piece fresh ginger minced
  • 3 tbs rice wine vinegar
  • 3 tbs vegetable oil
  • 3 tbs peanut butter smooth or crunchy is fine
  • 2 tbs soy sauce
  • 2 tbs brown sugar

Instructions

  1. Place the chopped cabbages, capsicum, carrots and spring onions into a large bowl and set aside.
  2. To make the dressing, mince the garlic and ginger and place into a small bowl.
  3. Add the rice wine vinegar, vegetable oil, peanut butter, soy sauce and brown sugar and whisk together until smooth and creamy.
  4. Check the consistency and if you find the sauce is too thick, add a little hot water and mix until smooth.
  5. Just before serving, spoon the dressing over the vegetables and toss to combine.

Ingredients

  • 1/4 purple cabbage finely chopped
  • 1/4 green cabbage finely chopped

Instructions

  1. Place the chopped cabbages, capsicum, carrots and spring onions into a large bowl (you can also chop the vegetables in the Thermomix on Speed 4 for 3 seconds - or until chopped to your liking).
  2. To make the dressing, place the garlic and ginger into a clean TM bowl. Press Turbo several times or until very finely chopped (scrape down the sides of the bowl occasionally).
  3. Add the rice wine vinegar, vegetable oil, peanut butter, soy sauce and brown sugar and mix on Speed 4 for 20 seconds.
  4. Scrape down the sides of the bowl and repeat for a further 20 seconds or until smooth and creamy.
  5. Check the consistency and if you find the sauce is too thick, add a little hot water and mix until smooth.
  6. Just before serving, spoon the dressing over the vegetables and toss to combine.
