Apple Berry Tea Cake | A Classic Recipe

Hello everyone! For today’s recipe, I thought I’d share one of my favourite cakes – Apple Berry Tea Cake. This is so ridiculously easy and it tastes incredible. It literally takes 10 minutes to prepare… which means that you can have cake anytime and anywhere (a seriously dangerous thing!).

Until recently, my Apple and Almond Tea Cake has been my fave, but this new version has kicked it off it’s high little perch. I love the combination of fruit and cake. And you can almost (kinda… sorta… maybe!!) justify it as being healthy given the fruit. Hmm that could be pushing things a bit. Either way though, it’s a fabulous little cake and you’ll LOVE it!

To make this yummy Apple Berry Tea Cake you simply beat the cake ingredients together and pour into a prepared springform cake tin. Sprinkle over the berries and then layer the sliced apple in a cutesy little overlapping pattern around the outside edge. Add a few more berries into the middle to make it look super pretty and then sprinkle over some raw sugar for a totally scrumptious caramelised apple kind of flavour!

One little tip is to slice the apple really thin so that it goes all super yummy and soft when it’s cooked. Mmmmm….. drool!

Ingredients

  • 225 g self-raising flour sifted
  • 165 g caster sugar
  • 125 g butter softened
  • 1 tsp vanilla extract
  • 2 eggs
  • 125 ml milk
  • 1 apple with the core removed, thinly sliced
  • 120 g fresh or frozen berries blueberries, raspberries, blackberries, strawberries
  • 3 tbsp raw sugar

Instructions

  • Grease the bottom and sides of a 22cm springform pan.
  • Line the base with baking paper.
  • Preheat oven to 160 degrees celsius.
  • Place the self-raising flour, caster sugar, butter, vanilla, eggs and milk into a large bowl bowl.
  • Mix with electric beaters until just combined.
  • Pour the mixture into the prepared tin.
  • Sprinkle over 3/4 of the berries.
  • Layer the apple slices in an overlapping pattern around the outside edge of the cake.
  • Place the remaining berries in the middle of the cake.
  • Sprinkle with 3 tbs raw sugar.
  • Bake in the oven for 40-45 minutes or until the cake is cooked when tested with a skewer.
  • Leave to cool in the baking pan for 20 minutes before placing onto a wire rack to cool completely.
  • Serve on it's own or warm with a scoop of vanilla ice cream.

Apple Berry Tea Cake Thermomix Instructions:

1. Grease the bottom and sides of a 22cm springform pan.

2. Line the base with baking paper.

3. Preheat oven to 160 degrees celsius.

4. Cream butter, sugar and vanilla together for 30 seconds on Speed 4.

5. Scrape down the sides of the bowl.

6. Add the eggs and milk and beat for a further 20 seconds on Speed 3.

7. Add the self-raising flour and combine for 20 seconds on Speed 4.

8. Pour the mixture into the prepared tin.

9. Sprinkle over 3/4 of the berries.

10. Layer the apple slices in an overlapping pattern around the outside edge of the cake.

11. Place the remaining berries in the middle of the cake.

12. Sprinkle with 3 tbs raw sugar.

13. Bake in the oven for 40-45 minutes or until the cake is cooked when tested with a skewer.

14. Leave to cool in the baking pan for 20 minutes before placing onto a wire rack to cool completely.

15. Serve on it’s own or warm with a scoop of vanilla ice cream.
