Add the plain flour, caster sugar baking powder, bi-carbonate soda, salt, milk and vanilla extract to the melted butter. Whisk the batter mixture until smooth.
Add the chopped strawberries. Stir to combine the strawberries in the batter.
Heat a non-stick frying pan on a low to medium heat with a small amount of butter added to the pan. Pour approximately ¼ cup of batter mixture into the frying pan and cook until bubbles appear and the underside is golden, then gently flip to cook the other side.
These strawberry pancakes are just delicious served with extra chopped strawberries and a dusting of icing sugar on top or any of your favorite toppings!
