So it’s Wednesday, which means it’s hump day. The weekend is still a few days away and the past weekend is like a long lost memory by now! And this is made all the more difficult by the fact that it is soooo cold!! I heard on the news that today was the coldest morning in Melbourne so far this year… the ice on the car windows and the fact that my nose is bright red from the wind are testament to that.
Wednesday is also the time of the week when my inspiration for making lunches has well and truly fallen by the wayside (vegemite on Vita-Weat regularly save me on these days!).
Anyway, this complete and utter lack of knowing what on earth to have for lunch led me to a google search on yummy sandwich fillings! If you are like me and your vegemite sanga could do with a little makeover, then I hope these lead you on a path of sensational sandwich making!
Chicken, Avocado, Sundried Tomato and Pesto Sandwich
I like the idea of this one as it’s a great way to use up leftover roast chicken… waste not, want not… or so the saying goes! And I would probably whack some sprouts in as well, just to bump up the vegie count and because it looks pretty (yes I’m a bit of a girl!).
Roasted Vegetables with Feta, Olives and Rocket Sandwich
Again, a great way to use up leftovers! Spread the feta onto the bread, top with sliced olives and roast vegies and then add a little rocket to the top (rocket is a pretty addition as well… but very nutritious too I’m sure!).
Egg, Mayo, Lettuce and Smoked Ham Sandwich
I’m not usually an egg sandwich kinda girl… the smell can be a little off-putting. But this sandwich caught my attention because it’s like breakfast in a sandwich! Mash a hard boiled egg and add some mayo then spread on the bread. Top with the ham and lettuce and voila it’s like breakfast at lunchtime… perfecto!
Salami, Baby Spinach, Cheese and Relish
Yum! This sandwich reminds me of when we were in Italy last year and ate way too much salami! It was so good on fresh bread… So this is a bit more of a gourmet version than the ones we made on the run (in between sightseeing and eating more gelato, pasta and pizza than you would believe is possible… oh and do not even get me started on how cheap the wine is there!!!!). So add a bit of relish to the bread, pop on some cheese, the salami and baby spinach. Feel free to toast the sanga if that tickles your fancy…. bellissimo!
Turkey, Cranberry, Camembert and Seeded Mustard
I know this is a classic, but it’s included in this list of yummy sandwiches because it is just as good toasted or plain.. double bonus! Spread the mustard on one slice of the bread, cranberry sauce on the other, add some slices of camembert and some turkey. And just because I like a bit of greenery in my sanga I would probably add some rocket, but you could go crazy and experiment with whatever you like!
These sandwich ideas would be just as good in a roll, or if you really want to throw caution to the wind, even a wrap! And now that I have finished writing this, I have realised that I don’t have any bread whatsoever at home… so it may have to be another Vegemite and Vita-Weat day 🙁 … oh well I’m all inspired now for next time!! And if it wasn’t so darn cold I would go and buy some bread, but it is, and my ugg boots and heater say NO!
