Healthy and delicious… this Walnut & Chia Banana Bread ticks all the boxes for a yummy breakfast on the go! Simple and delicious!
I often get stuck in breakfast ruts! I love eating breakfast but usually fall back into the habit of eating oats with banana, strawberries and blueberries most days (particularly on work days when my sole aim is to run around like crazy and get my bum out the door on time!). I’ve had a packet of white chia seeds sitting in the cupboard just calling my name and begging me to make a berry chia pudding one day… but that day hasn’t yet come!
So when a friend of mine told me about a yummy banana loaf she had made, I thought I would whip one up to and have it for breakfast. I did make a couple of changes to the original recipe by adding in chia seeds and coconut but you could easily leave those out if they don’t tickle your fancy!
It took literally about 5 minutes from starting to get the ingredients ready, to popping the loaf into the oven. I made it at the same time I cooked dinner, so the oven was on anyway! Dinner and breakfast cooked at once… double bonus!
Normally I would eat banana loaf for morning tea (usually slathered in cream cheese icing), but this one was absolutely delicious just sliced, toasted and buttered. Mmmm!
I really enjoyed this walnut & chia banana bread and it was a nice change from my normal breakfast routine! Walnut & Chia Banana Bread
- 400 g very ripe bananas
- 100 g walnut halves
- 100 g raw sugar
- 1 tsp ground cinnamon
- 1 tsp grated nutmeg
- 300 g self raising flour
- 1/4 cup coconut
- 2 tbs black chia seeds
- 1 tsp bicarbonate soda
- 120 g almond milk
- 50 g vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 2 tbsp raw sugar
Preheat oven to 170 degrees celsius (fan-forced).
Mash bananas into a large bowl.
Add sugar, spices, sifted flour, bicarb, walnuts, coconut, chia seeds, milk, oil, vanilla and eggs.
Mix together until just combined.
Line a large loaf tin with baking paper.
Pour mixture into loaf tin and sprinkle the raw sugar over the top.
Bake for approx 45 minutes or until inserted skewer comes out clean.
